so reducing the hardware volume to 1 (minimum volume) on the Dragonfly red (whose volume control is digital - 64 steps) will theoretically reduce the bit depth?

If the DAC does the volume reduction in its digital part, then this will indeed reduce the bit depth before conversion to analog.
But as the DAC = Digital Analog Converter delivers an analog signal, it doesn't really make sense to speak of bit depth.
What do need a high bit depth for ? To have a high dynamic range and be able to hear the parts of the music that have low volume.
Which you won't hear anyway if you reduce the volume to minimum.

ok but if the minimum volume is loud enough for my headphones I will loose that low volume parts, right?
So it is better to change the amp or the headphones for a better pairing..

So you've got an external DAC which delivers such a high analog output signal that you have to set volume to minimum ... then you might try headphones with a higher impedance.
